Not-So-Devilish Eggs

6 hard boiled eggs, peeled and halved lengthwise1/3 cup reduced-calorie mayonnaise2 tablespoons low-fat cottage cheese, drained2 tablespoons mustard2 tablespoons sweet pickle relishsalt & pepper, to tastePaprika, for sprinklingParsley sprigs, for garnish (optional)
Place three of the egg yolks in a bowl (discard the others), and mash them.
Add the mayonnaise, cottage cheese, sweet pickle relish, mustard, salt and pepper to taste.
Mix all the ingredients together. The texture needs to be firm enough to pipe back into egg halves with a pastry bag or with a spoon.
Spoon or pipe (with star tip) filling into egg whites, then sprinkle with the paprika. Garnish with the parsley.
Refrigerate, covered, until ready to serve.

The unused egg yolks can be used in egg salad sandwiches, in potato salad, in a dip, just to eat...... They are too tasty and nutritious to simply "discard"..... We had "deviled" eggs twice at Thanksgiving time and simply spooned the yolk mix high. Adding cottage cheese sounds like a good idea. - 11/29/08

Although I think this isa good recipe I am really concerned by the comment that one should discard 3 of the egg yolks! As a pensioner I have to use all my ingrediens to the full. I used the 3 extra egg yolks in my kedgeree but cld thinkof other ways to use them instead of binning them. - 11/29/08

My family doesn't care for the pickle relish in deviled eggs, but loves my choice of seasonings: mustard, n/f mayonnaise, garlic, a dash of cerlery salt, dill weed, paprika and vinegar. Also use low-fat whipped cream cheese instead of cottage cheese, but plan to try no-fat cottage cheese next time. - 7/18/10

I have always used (as did my mother) "hot dog relish" which has mustard already in it, when preparing deviled eggs. This is pretty much my recipe with a little cottage cheese added. I too wonder why all these people are flipping out over the extra egg yolks - if there are any. So silly - 5/12/10

I also like the idea of using the cottage cheese as a lower calorie alternative to the mayo but some mayonaises are low or fat free and have few calories per tbsp so maybe it wouldn't save calories or very few. I would use the extra yolks for something but definately not discard them. - 5/12/10

I'll have to try these but like others, I think I'll try ricotta cheese in place of cottage cheese. I prefer ricotta over cottage cheese(unless I put in blender first).I like idea of stretching the filling. Will also use extra yolks maybe on garden salads; will add color and flavor! - 7/20/10
