2 cups chopped cooked chicken breast1 can Del Monte Diced Tomatoes with Garlic and Onion or Green Chilies1/2 cup chopped onion1/2 cup chopped red bell pepper1/2 cup chopped zucchini squash1 small carrot, peeled and chopped2 cloves of garlic minced1 cup fresh spinach, chopped1 jalapeno pepper, seeds and ribs removed, minced1 TB olive oil2-3 tsp ground cumin1 tsp ground oregano4 cups low sodium organic chicken or vegetable broth1 cup watercilantro & lime wedges for garnish
In stock pot, heat olive oil and saute onions, red bell pepper, jalapeno pepper, garlic and carrot until tender. Add cumin, oregano , chicken breast and tomatoes. Bring to a bowl, reduce heat and add water, zucchini and beans. Simmer for 10 minutes. Add spinach and simmer until spinach is wilted. Ladle into soup bowls and sprinkle with chopped cilantro. Serve immediately with lime wedges
