Chicken Fried Rice - Homemade

Ingredients
4 cups left over long grain brown rice.2 whole eggs or 4 egg whites scrambled1 cup leftover cauliflower mashed and added to eggs1 1/2 cups frozen peas3 cloves garlic, minced2 Tbsp Peanut Oil2-3 Tbsp soy sauce6 oz leftover chicken/pork/beef/shrimp
Directions
Mash up steamed cauliflower and whisk into the eggs and scramble, cook in large skillet with a little peanut oil and garlic. Add rice and leftover chicken with a little more oil and soysauce, cook until heated through Add the frozen peas the last 3-5 minutes and serve.
