Sofia's Chicken Paprikash

Ingredients
1 lb. chicken breast tenderloins1 tbsp. extra virgin olive oil2 red peppers, thinly sliced1 large onion, thnly sliced2 tbsp. hot paprika 1/2 cup dry white wine1/2 cup fat free chicken broth1 1/2 cups crushed tomatoes1/4 cup reduced fat sour cream2 cups cooked whole wheat pasta, spagetti, fettucine or linguini
Directions
Start water for pasta and cook. Meanwhile, heat 1 tbsp extra virgin olive oil on med-high heat in large saute pan. Salt and Pepper chicken. Add to hot pan, turning once to brown on both sides. Set aside. Add red peppers and onions to pan on medium heat, cooking until softened, about 5 minutes. Add paprika, stirring until fragrant, about 30 seconds. Add wine, cook until almost evaporated, about 1.5 minutes. Add crushed tomatoes and chicken broth, bring to a boil. Cut chicken into 2 inch pieces, add chicken and any accumulated juices to pan. Reduce to a lively simmer, spooning sauce over chicken and cook, approx. 6-8 minutes more. Remove from heat, stir in sour cream. Serve over 1/2 cup of wheat pasta.
