Quinoa with Leeks, roasted veggies, and chickpeas

Ingredients
* *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup (remove) * *Bush's Garbanzos (chickpeas), 3.5 cup (remove) * *Leeks (1 leek = 125g), 1 serving (remove) * Olive Oil, 1 tbsp (remove) * Walnuts, .25 cup, chopped (remove) * *Peppers, sweet, red, fresh, .25 large (2-1/4 per lb, approx 3-3/4" (remove) * Zucchini, 1 cup, sliced (remove)
Directions
-Cook quinoa as directed
-roast zucchini in oven at 450 for 30 minutes
-saute leeks, peppers, and garlic in olive oil
-stir in walnut and garbanzos.
