Zucchini & Rice Casserole

Ingredients
1 cup rice4 medium zucchini, sliced1/2 cup light mayonnaise1 1/2 cup low fat cheddar cheese3 eggs
Directions
Cook rice according to directions. Meanwhile, steam zucchini until soft. Drain very well.

Beat mayonnaise and eggs together. Add cheese.

Combine all ingredients. Pour into casserole dish.

Bake at 350 degrees for 30 minutes.

    Delicious! I added sliced carrots in addition to the zucchini and tomatoes and cut up chicken to make it a main supper dish. Served with a side salad - 9/16/16

    I kept out some of the cheese to sprinkle over the top and added garlic, oregano and Penzey's no salt Forward! seasoning because I can't leave a recipe alone. I also doubled the portion size and used it as a main dish. If sodium isn't an issue you'd probably want to add some salt. - 3/2/12
