Ina Garten's Coconut Macaroons

Ingredients
14 oz. can sweetened condensed milk14 oz. sweetened shredded coconut1 tsp. vanilla extract2 extra large egg whites, at room temp.1/4 tsp. kosher salt
Directions
Preheat oven to 325 degrees.
In a large bowl, combine 1st 3 ingredients.
In a separate bowl, whip the egg whites and salt with an electric mixer on high until they form med-firm peaks. Carefully fold them into coconut mixture.
Drop the batter onto cookie sheets using either a 1 1/4 inch diameter scoop or 2 teaspoons.
Bake for 25-30 minutes, until golden brown. Cool and serve.

Makes 2-3 dozen cookies.
