Frijoles de la Olla

Ingredients
1 lb pinto beans1/4 c sliced onion1 tbsp oilsalt to taste
Directions
Clean the beans then cook them in plenty of water. Once they are tender, strain them. Add fresh water. While the beans come to a boil again fry the onion in the oil until very well browned. Once the beans are boiling add the salt and then the onions and oil. Place a few spoonfuls of beans in the pan where you fried the onion and let it season for a little while. Return them to the pot. Let simmer for about an hour more. Makes 6 servings.
