Cheesy Corn Stuffed Bell Peppers

Ingredients
1 Green Bell Pepper1/4 Cup Fat Free Cottage Cheese3 tsp Salsa1/2 cup corn1/2 Crushed Fat Free Saltine Cracker (optional)
Directions
Preheat oven to 350. Cut top off pepper, spoon out seeds set hollow pepper aside with "lid." Mix cottage cheese, salsa, and corn, spoon mixture into hollow pepper. Crush saltine cracker and sprinkle over mixture and dust with seasonings if desired. Bake at 350 for about 10 minutes. Makes one stuffed pepper, serves 1-2 if they don't mind sharing!
