Gelatin Cheesecake

3 packages of strawberry jello (can use sugar-free--I'm allergic to aspertame)12 oz. cottage cheese2 reduced fat graham cracker pie shells1-2 qts. strawberries
Makes 2 pies
Add 1 cup boiling water to 2 packages of jello and stir until jello is dissolved.
Add 1 cup cold water.
Put the cottage cheese and jello into a blender and blend until smooth.
Pour evenly into the two pie shells.
Refrigerate until set.
Put halved or sliced strawberries on top of cheesecake mixture.
Make last box of jello according to package instructions and pour evenly over the two pies.
Refrigerate until set. Add Cool Whip or whipped cream, if desired.
Note: can match fruit with jello--peaches, blueberries, raspberries, etc. with whatever fruit is in season
