Black Bean Soup with Lime and Cumin

Ingredients
1 Pounds Dry Black Beans1 Tbsp Olive Oil1 Medium Onion2 Carrots4 cups vegetable broth4 cloves garlic6 jalapeno peppers (roasted and peeled)3 LimesCumin (toasted seeds - or powder)Bunch of cilantro
Directions
Saute onions, carrot, garlic
Add presoaked black beans, cumin, and add broth
Simmer till beans are soft

Puree bean mixture plus peppers and lime juice

Add enough water to make 12 cups

Makes 12 one cup servings
