Lemon & Black Pepper Fillet

Ingredients
This is for one fillet only, but you get the idea :)1 x Fave Fish FIllet (usually around 100 grams) - I use Hake or whiting but the choice is yoursLemon juice, 2 tbsp - this is just a rough guide, its all dependant on your tasteBlack Pepper - Freshly ground from the peppercorns is bestButro - 2 teaspoons (butro is a local butter spread - use your equivalent)
Directions
Pre-heat your oven to 180 degrees

Grab a small section of tin foil (big enough to wrap your fillet)

Place your fillet in the centre and "blob" the butro in small amounts along the centre of the fillet.

Sprinkle your lemon juice and black pepper to your taste requirements.

Wrap your fillet up loosely like a parcel, this will allow the butter to heat and melt through the fillet and the resulting juices to steam your fish.

Place on a baking tray and into your oven.

Leave to steam for roughly 20-30 minutes.... open up and serve.

(I like to serve placed on a bed of veggies and couscous)

    I do something similar with a big salmon filet: sprinkle with Lawries seasoned salt, fresh cracked pepper and some tarragon. Place on baking dish and dot with a small bit of butter. I sprinkle on the lemon juice toward the end of cooking. - 7/16/09

    I used tilapia for this recipe & it was excellent. I also tried adding some fresh summer squash & zucchini then cooked it on the grill instead of the oven and it turned out quite good too. Excellent recipe. - 7/16/09
