Vegetarian Fajitas

1 large onion1 1/2 cup bell pepper strips (about 2 small or 1 1/2 large, choose at least 2 colors)1 - 15 oz can low sodium black beans1/2 cup frozen corn1/2 packet (about 8 tsp) dry fajita seasoning1/4-1/2 cup tap water
1. Cut onion and bell peppers into ½ inch wedges and strips. Cook on medium-high heat in 1 Tbsp olive oil until soft and onions are almost translucent (about 6-10 minutes)
2. Drain and rinse black beans in colander. Add black beans, corn, fajita seasoning and 1/4 - 1/2 cup water. Stir and let simmer, covered, about 5 minutes, until flavors have mixed and mixture is boiling slightly.
3. Serve 3/4 cup on your favorite tortilla, whole wheat works great with this recipe. Add lime juice to taste and enjoy!
