Chicken with Artichoke Hearts and Spinach

Ingredients
Olive oil 4 tbsp1 pound chicken breastsGarlic 3 cloves minced1/2 medium onion sliced1 pkg frozen spinach1 pkg frozen artichoke heartsSaltPepperOreganoThymeParsley1 cup chicken broth
Directions
Heat oil in pan, season and cook chicken on each side until browned, add garlic and onion and sautee until soft. Cut chicken into cubes and add to pan. Add chicken broth and frozen vegetables. Cover and let cook 10-15 minutes.

    I made this last night and not only was it easy but it turned out great. Next time I will use a little more of the seasonings when browning the chicken! This is definitely one that I would reccommend. - 1/25/11
