Vegan Fajita Filling

Ingredients
1.5 tbsp olive oil1.5 cups firm tofu, diced1 onion, sliced thinly2 sweet bell peppers (green, red, orange, or yellow), sliced into thin strips1.5 tsp ground cumin1 tsp oregano.25 tsp black pepper.25 tsp red pepper or cayenne.25 tsp garlic powder
Directions
Makes 6 servings

Heat olive oil in a large frying pan, then saute tofu, onion, and bell peppers until slightly softened. Add spices and saute until veggies are soft and tofu is slightly crispy around the edges.

Serve in a tortilla, over chips, topped with salsa and/or cheese if you like.
