Succotash

Ingredients
2 cups fresh shelled butter or lima beanskosher salt (to taste)2 large ears fresh corn2 tablespoons unsalted butterfresh ground black pepper (to taste)1/4 cup heavy cream1/4 cup minced country ham
Directions
Cover beans with water in large saucepan, add approximately 1 teaspoon salt. Bring to a boil. Skim surface until clear. Cook, partially covered, 30 to 40 minutes, until tender. Strain and set beans aside.

Clean corn and cut kernels from cobs.

In a large skillet, heat butter over medium-high heat until melted and foaming. Add corn. Lightly season with salt and pepper, stirring to coat corn in butter. Cook 1 to 2 minutes. Add beans. Lightly season with salt and pepper. Cook 1 minute more. Do not overcook corn and beans.

Add cream and ham. Cook until just heated through and slightly reduced. Season to taste. Makes 8 servings, approximately 1/2 cup each.
