Portabella Mushroom Mini Pizzas

Ingredients
1 Portabella Mushroom cap (with stem removed)Pam Olive Oil Cooking Spray1/2 cup fresh Baby Spinach1 clove crushed garlic1/2 cup Spaghetti or Marinara Sauce1/2 cup 2% Shredded Mozzarella Cheese3 slices of Turkey Pepperoni (or leave off for vegetarian)
Directions
Preheat oven or toaster oven to 350F.

1. Heat frying pan over medium heat. Add small spray of Pam.
Add garlic and baby spinach. Saute' until wilted.
2. Wash and remove portabella mushroom stem. Dry with paper towel.
3. Spread spaghetti sauce on mushroom cap. Top with garlic spinach and cheese.
4. If adding pepperoni, slice into small wedges and add to top of your pizza.
5. Bake for 12 - 15 minutes or until cheese is golden brown.

    Delicious! My hubby was too chicken to try it, but I loved it! I used the mushrooms as if they were a normal crust, and made my favorite veggie pizza. The mushrooms really added to the pizza and made it meatier. - 2/8/10
