Cold Chicken & Pineapple Rice Salad

Ingredients
1 Cup uncooked Brown long grain rice1 Cup uncooked White long grain rice4 1/2 Cups water2 Tbsp. butter16 oz. of Tysons grilled chicken breast strips, thawed slightly 1 Can of Pineapple chunks , or crushed pineapple (2 1/4 cups) (drain juice) 8-12 Tbsp. of Mayonnaise, depending on how long it will chill 1 Tbsp. Kraft Zesty Italian dressing.
Directions
Intended for 8 servings.
Measure 1 Cup each of White and brown long grain rice into 2+ Qt. saucepan. Stir to mix.
Add 4 1/2 cups Water .
2 tbsp. unsalted butter.
Cook covered 20 mins. until rice is done. (following basic instructions on pkg. to cook the rice.)
While it is cooking, thaw the frozen grilled chicken strips lightly in the microwave (just enough to cut easily into chunks. You may substitute other plain chicken strips or even canned chicken, broken up.). When they are ready, cut them up into small, bite-sized chunks.
Drain the can of pineapple chunks. (May use crushed pineapple if preferred, just measure)
When the rice is done, move it from the pan in which it cooked to a large mixing bowl.
Fluff it gently with a fork to separate it, then stir in the chunks of Chicken.
Add 8 Tbsp. of mayonnaise, to keep it moist and sticky together.
Lightly drizzle 1 Tbsp. of Italian Zesty dressing over the salad for flavoring; Stir in.
Lightly stir in the drained pineapple chunks.
Chill in the refrigerator at least 2 hrs. You may want to add in more mayonnaise (or mustard, for some tastes) if mixture appears too dry when you are ready to serve.
Optional extras, depending on personal preferences : you may add chopped celery, raisins, or nuts, depending on your personal taste and calorie preferences.
