1 lb boneless, skinless chicken breast1 pkg Old El Paso taco seasoning1 - 10 oz package yellow rice1 - 15 oz can black beansLow fat cheddar cheeseChopped tomatoChopped onion
Thoroughly cook chicken breast. Dice chicken in to bite-sized pieces and add taco seasoning according to package directions.
Cook yellow rice according to package directions. (We always cook it in the microwave.)
Heat black beans.
Once everything has been cooked, create your own dish. My mom always layers everything, but I mix everything in together. You can create many different flavors using different combinations of these ingredients.
