Mango Crisp

4 cups ripe mango, peeled and diced1 cup oats1 cup brown sugar, unpacked1/2 cup margarine or butter1/2 cup whole wheat flour
Preheat oven to 350. Lightly spray 8x8 inch square dish with cooking spray.
Peel and dice 2-3 large mangoes. Place diced mangoes in bottom of prepared 8x8" square pan or other casserole dish.
Combine oats, flour and brown sugar until blended. Then, using your hands, lightly work cold margarine or butter into the oat mixture until mixture is crumbly (resembles wet sand).
Evenly distribute oat mixture over mangoes in dish.
Bake at 350 degrees for 35 to 40 minutes or until golden brown.
Serve warm or at room temp with ice cream, plain yogurt or on it's own!

I baked this using the mangoes I had on hand (3 cups) and added 1 cup of nectarines to make up the difference. It just came out of the oven and I had a taste; it's absolutely DELICIOUS!!! Excellent recipe; I'll have to try other combinations as I'm sure they'll be delicious too! Thanks :) - 8/2/10

this was excellent. My mangoes were very ripe, and very sweet. so, I added some raspberries to balance that a little. I took it to a picnic yesterday. Not only was it finished, but we spent about half an hour trying to figure out other combinations we could cover with the crisp. Thanks. - 7/5/10
