Tomato Basil Mozzarella Salad with Balsamic Reduction

Ingredients
2 cups fresh spinach2 oz. part skim mozzarella, cubed0.5 cup cherry tomatoes, halved2 tbsp. fresh basil, chopped2 tbsp. balsamic vinegar reduction
Directions
Combine all ingredients except balsamic vinegar reduction. Toss ingredients together and place on a plate. Drizzle 2 tbsp of balsamic vinegar reduction over mixture and serve!

**To make balsamic vinegar reduction, place 1 cup of balsamic vinegar into a small pan. Place over low heat and simmer until it reduces by half. (1 cup will make 1/2 cup of reduction - you only need 2 tbsp for this recipe so you can reserve the rest of the reduction for later. This reduction also tastes great over ice cream! - Don't believe me? Try it!). If you reduce it too much, you can always mix in a ittle bit of water back to your reduction to thin it up and get the correct consistency.
