Homemade Woodstock Dressing

Ingredients
1/3 cup warm water3 pieces of sun dried tomato (not oil packed)*soak tomatoes in water until slightly softened1/3 cup EVOO1/3 cup canola oil1/4 cup apple cider vinegar5 T. soy sauce3 T. nutritional yeast flakes2 T. tahini3 large cloves garlic
Directions
*add all ingredients, including tomatoes and soaking water, to a blender
*blend all ingredients until tomatoes are pureed and mixture is emulsified
*refrigerate until ready to use

1 serving = about 1 Tablespoon

    Taste just like the original. I made some modifications to accomodate our diet. I used fire-roasted tomatoes (canned, drained), and I only used 1/3 cup canola for the whole recipe. - 9/5/11
