Kat's Pancakes

Ingredients
1/2 c. soy flour, low fat1/4 c. oat flour, whole grain1/4 c. rice flour, brown1 tsp baking powder3 tsp brown sugar, packed1egg, large3/4 c. milk, 2%2 Tbsp Canola oil
Directions
Mix all dry ingredients together. Add egg, oil and milk, mix well. Cook on medium heat on stove top. Flip pancake a few seconds after middle of pancake becomes bubbly, cook for about another 30 -60 seconds place on plate. Serve with butter and syrup, or your family's favorite strawberry jam.

    Oat flour is not usually considered Gluten free. While oats and oat products are okay for some, others can not tolerate them. - 12/2/09

    you can purchase gluten free oats and grind them yourself
