Mandarin Cucumbers

Ingredients
1 cup or 1 med Asian cucumber (regular cucumbers are ok, but rather sweet) 1 tsp. flaxseed or other oil 1 tsp. soy sauce 1 tsp sesame seeds Optional: a splash of mirin (rice cooking wine)
Directions
Heat oil to medium in skillet. Chop cucumbers into 1 inch chunks. Add cucumbers and saute for about 5 mins then add other ingredients. Continue to saute until cucumbers are tender and slightly translucent.
