Zucchini and Carrot Strands

Ingredients
cooking spray (probably not necessary)1 tsp. olive oil2 medium carrots, peeled & julienned1 medium zucchini, julienned1/4 c. low sodium chicken broth1 clove garlic, minced1/4 tsp. salt1/8 tsp. black pepper
Directions
Coat large non-stick skillet with cooking spray. Add oil. Place over medium heat until hot. Add carrot. Saute 1 minute. Add chicken broth. Cook 1 minute, stirring occasionally. Stir in zucchini, garlic, salt and pepper. Cover and cook 3 minutes or until vegetables are crisp-tender. Yield: 4 servings
