Chocolate Chip Banana Bran Muffins

Ingredients
1/2 cup skim milk1/2 cup water2 Tbsp vinegar1 1/2 cup Kellogg's Original All-Bran (I substitute Fiber One)1 cup flour1 tsp baking soda1 tsp baking powder1/2 tsp ground cinnamon1/4 cup SPLENDA1 medium banana3 egg whites1/2 cup unsweetened applesauce1/4 cup semi-sweet chocolate chips
Directions
Combine milk, water and vinegar. Mix in all bran. Let sit for 20 minutes. Mix together all dry ingredients in separate bowl. Add 1 mashed banana, 3 egg whites and applesauce to bran mixture. Add dry ingredients to bran mixture and mix with spoon. Fold in chocolate chips. Spritz muffin tins with Pam Bake at 375º for 18 - 20 minutes.

    I substituted 1/4 c applejuice for the apple sauce and used white sugar instead. I also added 1/4 c walnuts, and dried cranberries. I used apple cider vinegar instead of white. - 10/8/11
