1/2 roasted lemon pepper chicken breast (3-4oz) cubed1c low sodium chicken stock1/3c frozen peas and carrots1 green onion rough chopped1/2-1 Tablespoon curry powder3 teaspoons corn starch1/2c prepared Instant Minute Rice
Start Minute rice and set aside to firm up. Heat chicken stock in small skillet til warm, add all ingredients except corn starch and rice, and bring to a simmer. Mix corn starch in a tea cup with 1 tablespoon water and add to skillet, stirring constantly until mixture boils and thickens. Taste for seasoning. Place all rice on plate or in a bowl, pour curry mixture over, and enjoy!
