Chicken Picatta

Ingredients
4 skinless chicken breasts, pounded flatFlour to coat1 T olive oil1/4 C drinking sherry or dry white wine4 cloves garlic, minced1 small onion, mincedJuice of 1 lemon (no seeds)1/2 C chicken broth3 T capersSalt & Pepper to taste
Directions
Coat the chicken with flour and shake off excess. Heat olive oil in saute pan over medium high heat. Saute the chicken about two minutes on each side, just until it is browned on the outside. Remove and cover. Add the wine or sherry to deglaze the pan, and scrape the browned bits off the bottom of the pand and it will be an integral part of the dish. Add garlic and onions and saute for approx. 3 minutes. Add remaining ingredients and saute for approx. 2 minutes. Add the chicken back in and saute until the chicken is done (about 5 minutes). Makes 4 servings.
