Edamame and Tuna Salad

Edamame, Canned Tuna (in water), red Onion, Carrot and Red Bell Pepper.
This should yeild 2 lunch size portions (approx. 1.5 cups each portion). This recipe came from a need to fix a quick healthy lunch today. I had all of these ingrediants in the house. Very high in protein!
1. Cook and cool Shelled Edamame according to directions (I used the microwave)
2. Dice onion, carrot and red pepper - Add to Edamame in large bowl
3. Drain tuna and add to bowl
3. In a seperate bowl; whisk together the vinegar, oil, lemon juice
4. Pour dressing on vegetable/tuna mix and salt and pepper to taste
Serve on bed of greens w/ lemon wedge garnish.
