Ingredients
Directions
* Cucumber (peeled & Sliced thin), 2 large (8-1/4" long) * Salt, .5 tsp * *Lemon Juice, .5 (1 tablespoon) * Sour Cream, reduced fat, .5 cup * Dill weed, dried, .25 tsp * Pepper, black, .08 tsp 1/8 tsp or (8 to 10 turns)
Peel and slice the cucumbers thinly and place in a bowl and salt them and set aside on the counter for about 10 minutes. This will draw out any water from them, then drain them.
In another bowl mix all the other ingredients and put that in the refrigerator. When the cucumbers are drained, do not rinse them but add the creamy dill mixture to them and mix thoroughly and cover and place in the refrigerate again til chilled. Makes a nice light lowfat sidedish. This dill sauce can also be made as a light sauce for use on cold greek chicken sandwiches in pita pockets.
