No-Fuss No-Grease Tomato Cheese Omelette

Ingredients
1 egg1/4 cup fresh mozzarella cheese, chopped or grated1/3 cup fresh tomatoes, chopped1 tsp. olive oilSalt to taste
Directions
Using a fork, whisk the egg and milk in a microwaveable bowl--this is the bowl you will eat from. Stir in cheese. Microwave on HIGH for about 1 min 30 sec. Add tomatoes. Microwave 30 sec more. Egg should be cooked thoroughly and cheese melted. Drizzle olive oil and sprinkle salt.

Dig in and enjoy! No pots to clean!

    This was so tasty! Milk wasn't listed in the ingredients, but you mentioned it in the directions, so I added just a spot of it while whisking the egg. I didn't have shredded mozzarella, so I chopped a Trader Joe's string cheese and followed the recipe as is. I added pepper and creole seasoning. - 7/6/12
