Ratatouille with Herbs de Provence

Ingredients
1 Large Can of Tomatoes2 Zucchini, sliced1 Medium Eggplant, cut in 1" cubes1 Medium Onion, choppedGarlic, 3 clovesPeppers, sweet, red, fresh, 1 large, choppedOlive Oil, 2 tbspBasil, 1 tspHerbs de Provence, 1 tbspSalt, 1/2 tspPepper, black, 1/4 tsp
Directions
Sauteé all the vegetable in the olive oil.. add the spices and simmer for 1 hour. Makes 5 servings of 1 1/4 cup. Serve over rice if desired.
