Apple Cinnamon Oatmeal Cookies

- 1 1/2 cups of quick cooking rolled oats, toasted until lightly brown-1/4 All purpose white flour- 1/4 All purpose wheat flour-2 teaspoon cinnamon- 1 teaspoon nutmeg- 1/4 teaspoon baking soda- 1/4 teaspoon salt- 1/4 cup packed brown sugar- 1/8 cup granulated sugar- 1/4 cup butter, softened- 1 apple peeled and coarsel grated- 1 egg- 1 teaspoon vanilla extract- 1/4 cup raisins
Preheat oven to 350 degrees.
Place oats on a pan and bake in oven until lightly browned.
In a large bowl combine flour, oats, cinnamon, baking soda and salt. Put aside briefly.
In a medium with an electric mixer cream the brown sugar and butter together on high until it's mixed thoroughly. Add apple, egg and vanilla. Beat until all is combined.
Add in the flour and oats mixture. Blend until combined.
Then stir in the raisins.
Place on greased cookie sheets, by the tablespoon. Bake until lightly browned, for 12-14 minutes. Cool on rack completely and store in an air-tight container.
Recipe yeilds 12-16 servings. Nutrition info figured out with a 16 serving yeild.
