Calabasita con Carne (Zucchini with Meat)

Ingredients
6 pork chops, cubed1 tbsp raw onions, chopped1 cup tomato sauce2 tps salt1 tsp ground pepper1 tsp cumin seed1 tsp garlic powder5 cups zucchini , sliced and quartered2 12oz canned yellow sweet corn3 - 4 cups water
Directions
In a large dutch oven, brown pork and onions over medium-high heat, stir occasionally to keep from sticking (you may toss in small pork chop bones if you have them). Once the meat has browned and cooked , add salt, pepper, cumin, garlic powder, tomato sauce, and water. Stir thoroughly. Add zucchini and corn and stir some more. Bring to a boil. Cover. Reduce heat and simmer for 15 - 20 minutes or until zucchini becomes soft.
Makes 10 2-cup servings

    My family has made this for 3 generations. It is a family favorite. I use sauted chicken as my husband cannot eat Pork. It can also be made as a vegetarian dish and just leave out the meat and top with shredded Mozzarella cheese. Yummy. - 8/25/09
