Red Ripe Tomatoes, 3 large whole (3" dia)Basil, 6 leavesKraft 2% Milk Mozzarella Shredded Cheese, 0.25 cupOlive Oil, 1 tspBalsamic Vinegar to tasteCoarse Black Pepper, to taste
Slice tomatoes any way you desire, chop up basil, and combine all ingredients in a bowl.
I used the Kraft mozzarella because it was the closest thing I could find at my local grocery store, but it's really much tastier and more authentic if you use real buffalo mozzarella balls.

I did not make this recipe. A low cal version I make is to slice a tomato, chop fresh basil (easily grown at home) drizzle a good quality basalmic vinegar (I use Leonardo's and Roberto's Gourmet Blend) & sprinkle a sm amt of 2% shredded cheese, omitting the oil. Low cal yet VERY satisfying! - 8/18/10

I love Caprese salad, but the chances of me finding both fresh mozzarella and fresh basil at the same time in the store in my little town are pretty slim. Using the shredded mozzarella still gave me the overall flavor of the original recipe, and there is not an easier salad to make anywhere. - 1/10/10
