Meatless Stroganoff

Ingredients
1 onion, thinly sliced1-1/2 tsp oil2 cups frozen BOCA Ground Crumbles OR Morning Star Meal Starters Crumbles 1/4 tsp. garlic powder1 can (14-1/2 oz.) vegetable broth1 can (8 oz.) mushroom pieces and stems, drained (I use fresh mushrooms)1 roma tomato1 container (8 oz.) light sour cream1 tbsp. chopped fresh parsley (can use dried)
Directions
Sautee onion in hot oil in large nonstick skillet on medium-high heat until lightly browned, stirring occasionally. If you used fresh mushrooms you can add these to this mixture toward the end, just to give them a little extra cooking time.

Add everything together except the sour cream and parsley; mix well. Bring to boil; cover. Simmer on medium-low heat 10 to 12 min. or until noodles are tender. Remove from heat.

Mix in sour cream; sprinkle with parsley.

    Made this last night and found that it tasted too salty because of the bouillon. Next time I am going to reduce the amount of bouillon. Also want to try skim milk instead of the sour cream. Tasted great otherwise - 1/8/10
