Eggs, 4 largeCanola Oil, 1 cupGranulated Sugar, 2 cupsBanana, fresh, 4 medium, mashedVanilla, .5 tsp.Flour, white, 2.5 cupSalt, .5 tsp.Baking soda, 1 tsp.Nutmeg, .25 tsp.Dark Chocolate Chips, 1 cup
Beat the eggs, oil, sugar, vanilla and mashed bananas together until smooth. Stir in the dry ingredients until just combined, then add the chocolate chips. Bake in a large oiled tube or bundt pan in a 350 F oven. Check after 30 minutes, it will take longer but how much depends on the pan you use and your oven, and if you use convection. Do not over bake.
