potatoes, about 5 pounds small (about 20)bacon, 6 slices pre-cooked and crumbledcelery, 1 cup dicedonion or shallots, 1 cup choppedgarlic, 1-2 cloves mincedparsley, 1/2 cup choppedchives, 3 tbsp choppedapple cider vinegar, 1.5 cupmustard powder or seed, 2 tspsalt and pepper to taste
Cut your potatoes into quarters (or smaller - I like my potatoes chunky). Add a pinch of salt, then cover with water. Boil the potatoes until tender, then drain and rinse to cool.
Add the bacon, celery, onion, garlic, parsley and chives to the potatoes. Combine the vinegar, mustard powder, and salt and pepper as desired, and pour over the potatoes. Toss to coat, and store for at least an hour.
Best served warm or room temperature. Makes about 18 1-cup servings.
