Sugar-Free Zucchini Bread

3 c. shredded zucchini1 2/3 c. splenda for baking2/3 c. vegetable oil2 tsp. vanilla4 large eggs3 c. self-rising flour4 tsp. ground cinnamon
Move oven rack to low position so that tops of pans will be in the venter of oven. Heat oven to 350. Grease bottoms only of two loaf pans.
Mix zucchini, splenda, oil, vanilla, and eggs until well mixed. Stir in remaining ingredients.
Divide batter evenly between two pans.
Bake for approximately 1 hour and 10 minutes. Let cool 10 minutes. Loosen loaves from pans and place top side up on wire rack. Cool completely (about 2 hours).
Slice loaves into 15 slices each.
