Tilapia with Mango Salsa

Ingredients
Mango Salsa1 large mango1 medium tomato1/2 cup red onion1 cup canned black beans rinsed2 tbsp fresh cilantro (or 2 tsp dried)juice of one small limesalt and pepper to tasteTilapia2 3-4 ounce tilapia fillets1 tsp cumin1 tbsp chile powder2 tsp oreganosalt and pepper to taste
Directions
For Mango Salsa-

Chop mango, tomato, and onions and put in medium sized bowl. Add rinsed black beans, lime juice, cilantro, and salt and pepper.

For Tilapia-

Mix cumin, chile powder, oregano, and salt and pepper in small dish. Rub spices on fish.
In a nonstick pan (sprayed with Pam) cook the tilapia for approximately 3-4 minutes on each side, or until the fish flakes easily with a fork.

Serve hot fish with cold mango salsa on top, or on the side with a side of brown rice. Enjoy!

    I really enjoyed this recipe with the exception of the spices being a little overpowering. I would cut back on the chili powder a bit next time. I ate it on a bed of brown rice and topped it with the salsa and it was delicious all mixed together! - 11/14/11

    I would double the whole recipe for 5, the fish tastes best with a nice coat of spices on it- and its always good to have more salsa if people want extras. Enjoy!
