Wilted Spinach Salad with Candied Pepper Bacon

Ingredients
4 slices thick-cut bacon1 tbsp packed brown sugar1/2 tsp coarsley ground black pepper1 package (6 oz) fresh baby spinach1 medium granny smith apple, cored and sliced thin1/4 cup thinly sliced red onionDressing1 tbsp bacon drippings2 tbsp brown sugar2 tsp dijon mustard
Directions
1. Arrange bacon slice in single layer on a plate, sprinnkle with brown sugar and black pepper. Microwave on high 3-5 minutes or until crisp; drain on paper towels reserving 1 tablespoon of bacon grease. cut bacon into 1/2 inch pieces.

2. Wash spinach then spin in salad spinner to remove excess water. In a large bowl combine spinach, apple and onion. Whisk reserved bacon grease, brown sugar, vinegar and mustard until blended. Microwave on high 2 minutes or until bubbly. Pour over spinach then toss gently to coat. Season with salt and pepper. Top salad with egg and bacon.
