Fish Florentine

Ingredients
2 green onions, chopped (scallions)4 medium mushrooms, chopped2 tablespoons canola oil4 cups baby spinach, fresh1 tablespoon flour1 cup skim milk3/4 cup cheddar cheese, shredded (optional)2 haddock fillets, or any white fish
Directions
4 servings
Over medium-low heat, fry the fish in 1 tablespoon oil. When cooked through (flakes easily with a fork) remove from pan and keep warm. Over medium heat, in the same pan, add the green onions and mushrooms and 1 tablespoon oil, if needed. Cook until soft. Add the spinach and cook until wilted. Add flour and stir well. Add milk, cook until bubbly and sauce starts to thicken. Add cheese. Stir until melted and well blended. Serve over fish.

    I used snapper, frozen spinach, and a lot more baby bella mushrooms but this was great and very easy. I did put the fish in the oven and the rest in the saute pan. I will make this often. Thank you - 9/13/09

    Sounds great but I was wondering if you used a 1 lb. box of frozen fish for this. The weight was not mentioned. - 12/13/09

    This was delicious, I used fresh spinach, orange roughy. Oh so good. I did fry it, I will try in the oven next time to save a few calories but this was good. Definately recommend this, it is a keeper. I will be making it again! - 11/19/09
