Quick Tuna-Apple Salad

2-6oz cans of tuna (I like it in olive oil, but in water is fine) drain2 large boiled eggs, chopped1 tsp mustard1 tbsp of light mayonnaise--less if tuna has oil1/4 small onion, choppedsmall red apple, chopped--skin on (sweet variety)pinch of oreganopinch of parsleycracked black pepper
1. Mix mayonnaise, mustard, onion, oregano, cracked pepper, and parsley in a bowl.
2. Add drained tuna, and mix in--lightly, keeping the flakes
3. Add the chopped apple, and lightly mix in
*Serve with salad greens, or add toast to make a sandwhich. The apple and herbs wake up a normally bland tuna salad!
