Banana/Apple Waffles

Ingredients
2 cup Whole Wheat Flour (Gold medal used for nut. info)3 overripe bananas*1 cup applesauce **1/2 cup brown sugar1 cup flax seed meal5 eggs1 1/2 tsp Baking Powder
Directions
1 serving is 2 waffles.

Combine Wet Ingredients: Applesauce, Bananas, and Eggs. Mix well using hand blender or mixer.

Using sifter or wire strainer add dry ingredients: Flour, Brown Sugar, and Baking Powder. Stir in Flax Seed Meal.

Heat Waffle Iron and spray with non-stick cooking spray+. Use 1/4 c mixture per waffle. (This depends on the size/style of your waffle iron) Cook for 6 minutes. These brown more quickly because of the flaxseed meal and are not 'sweet' waffles, but are great with a low cal/fat free syrup. Just a little though ;)

* For Bananas I put away overripe bananas in the freezer. When the time comes to use them, I defrost at room temperature and they mush up nicely

** For applesauce I baked peeled, cored and baked 4 yellow delicious apples. Placed in a baking dish with 1/2cup of water and topped with a dash of cinnamon and nutmeg. Bake at 350 till soft to fork and mash with hand blender. NO SUGAR ADDED!

+ I used Mazola - it's a 'free' spray. No cal, cholesterol etc. etc.
