Whole Wheat, Low-fat Blackberry Muffins!

Ingredients
2 cups Whole Wheat Pastry Flour1 cup nonfat milk2 egg whites1 tsp cinnamon1 tsp baking soda2 tsp baking powder1/2 tsp salt1/4 cup white sugar1/4 cup + 1 TB brown sugar6 ounces nonfat plain yogurt1 tsp. bourbon vanilla extract1 cup fresh blackberriesEven better with walnuts!
Directions
Preheat oven to 400 degrees.
Mix together dry ingredients in large bowl.
Whisk together wet ingredients in small bowl.
Make well in the center of the dry ingredients.
Pour all contents of small bowl into the well.
Fold gently until the batter is smooth and not lumpy.
Fold in blackberries gently.
Place in oven and bake 15-20 minutes.

    Delicious, and healthy too! What more could you ask for. I used a standard sized ice cream scoop to portion out the mixture, it puts just the right amount in each hole of the muffin pan. - 8/17/09
