Indian Style Easy Beef Curry (very low fat)

Ingredients
260g uncooked minced / ground beef1 medium carrot1 medium onion400g rice (cooked weight)1 medium can of chopped tomatoes2 tablespoons of curry powder (adjust to taste)
Directions
Makes 4 small servings. But makes a great meal when served with salad.

Cook the rice in the microwave or on the hob.

Chop the carrot, and onion.

Brown the minced beef in a pan without fat. When cooked drain the fat away.

Add the minced beef, vegetables and can of chopped tomatoes and curry powder to the pan.

Put a lid on the pan and simmer for 20 mins until the carrots are soft. Add water to the pan if necessary.

Serve with rice and salad

    This is a fantastic recipe. The only differences in mine are I used chopped red bell pepper instead of a tomato, and I used a lot more curry than the recipe calls for. Amazing. - 8/31/09
