500gms.Lean Goat Meat Chops(Lamb/Beef/Pork)200gms.Shallots(Red Onions)25gms.Ginger Root25gms.Garlic FlakesSalt to tasteCHUTNEY MASALA15 sprigs Fresh Mint1small bunch fresh Coriander (Cilantro)Leaves5-10 hot Green Chillies3tsps.Coriander-Cumin Powder1.5tsp.Turmeric Powder100gms.Yoghurt SEASONING2tsps.Garam Masala Powder(any Brand)1tspAsafoetida Powder1.5tbsp.Clarified ButterFOR THE SEAL0.5cup Whole Wheat Flour(Gehun Ka atta)Water to knead
PREPARATION
Grind together all the Ingredients for the Chutney Masala. Trim any fat and wash the Chops clean.Apply the ground Masala Paste to the Chops and marinate overnight in the 'Fridge.
Grind together the Shallots,Ginger and Garlic to a fine paste.Knead the Whole Wheat Flour to a pliable dough with Water and keep aside covered till needed.
METHOD
In a Baking Dish with a tight fitting lid mix the marinated Chops,the Shallot-Ginger-Garlic Paste and Salt to taste well.
In a Seasoning Pan heat the Ghee and lower flame.Sprinkle in the Asafoetida and Garam Masala Powders.Saute for 30 seconds on low heat.Pour over the Chops Mixture and blend in well.Close lid and seal it with the kneaded Whole Wheat Dough.This seals in the flavours and the steams the Meat to perfection.Bake covered in a 180 degrees pre-heated Oven for 30 minutes till cooked.Break seal and serve hot.
This Dish has a thick gravy and tastes best when eaten with any kind of crusty Bread or with Indian Breads like Naans or Parathas.
