Yogurt Spinach Dip/spread/meal/salad

Ingredients
-0.5 cup cooked spinach-0.5 cup cucumber chopped small-1 cup low fat plain yogurt (Greek yogurt is even better!-dash of salf-dash of pepper-dash of garlic powderYou can make this without the cucumber if you'd like and it will be "close" to spinach dip. cucumbers give it a nice crunch which I love.so here are the healthy alternatives that can change the taste a lot. If I'm eating this as a light meal I add 0.5 ounce (about 7 halves) of chopped walnuts to it.If I want to give it a hint of sweetness I add a table spoon of Raisins to itIf you like green onions adding a tiny bit of thinly shredded green onions (like 2 tsps) to it makes it taste good too.
Directions
Mix all ingredients in a bow and eat it by it self or as a side or use as a spread on crackers. You can just refrigerate left over and use later.

if you don't like the basic recipe definitely try it with walnuts and raisins!
Also you can play around with more yogurt or more spinach depending on what you like.

    Got in the cream cheese, so I'd make this but without the artichoke - but DH has been using the cheese.
    This evening - something tasty on my yummy wholewheat crackers - and I found this recipe.

    I used a yellow pepper (had no cukes), and less yogurt, more spinach. I added a little cheese, cayenne, garlic, and sunflower seeds to add more texture and spice. It would have tasted good as written, but I was trying to make it more appealing to my BF! Oh, It's even better a day later! - 9/4/09
