Whole Wheat Zucchini Bread

Ingredients
2 cups whole wheat flour1 tsp baking powder1 tsp baking soda2 tsp cinnamon1/2 tsp salt3/4 cup egg substitute1/2 cup Smart Balance 50/50 Butter Blend1/2 cup unsweetened applesauce1/2 cup Splenda Brown Sugar Blend1/2 cup Splenda2 tsp vanilla extract2 cups shredded zucchini (well drained)1/2 cup walnuts1 tbsp oats
Directions
Blend flour, baking powder, baking soda, cinnamon and salt. Set aside.
Beat together egg subsitute, Smart Balance, applesauce, brown sugar, Splenda and vanilla.
Slowly add dry ingredients.
Stir in zucchini and nuts.
Pour into 2 greased loaf pans.
Sprinkle top with oats.
Bake 45 minutes at 350 degrees.
Makes 28 slices.
