Lentil One Pot Casserole

Ingredients
200g green and brown whole cooked lentils125g dried brown rice2 medium carrots, grated850ml vegetable stock made from 2 stock cubes and water1 garlic clove, crushed5 basil leaves, roughly tornsalt and black pepper
Directions
1. Rinse the cooked lentils. Place all ingredients, less the seasoning and basil, in a large pot. Bring to the boil. Reduce heat, cover and cook until rice is tender. Season to taste and stir through basil before serving.

2. Add your favourite, seasonal vegetables to complete this dish.
